Potato and radish salad

- 5 Jolife radishes
- 5 potatoes
- 1 cucumber
- A few leaves arugula (rocket)
- Salt and pepper
- Extra-virgin olive oil
preparation
Rinse the potatoes under running water. Transfer to a pan and cover with cold water. Add coarse salt to the water. Bring to a boil and simmer for 15/20 minutes (according to the size of the potatoes). Remove the potatoes from the pan, allow to cool for a few minutes and peel. In the meantime, rinse the radishes and cucumber and cut into thin slices. Take out an ovenproof dish, add the peeled and chopped potatoes, the cucumber, the radishes and a few leaves of arugula, well rinsed. Season with salt and pepper, drizzle with extra-virgin olive oil and serve.
