Spring onion and parsley frittata

- 4 Jolife spring onions
- 6 eggs
- 1/2 apple
- 1 tablespoon Grana cheese
- 1 bunch chopped parsley
- 3 tablespoons extra-virgin olive oil
- Salt and pepper
preparation
Trim the spring onions, rinse, pat dry and cut into slices. Peel the apple, remove the core, and cut into small cubes. Cook the spring onions and the apple cubes over low heat in a frying pan with oil until wilted. Once the vegetables are soft, transfer to a bowl and beat in the eggs with the cheese, salt, and ground pepper.
Lightly oil the frying pan and return to heat until very hot. Add the egg mixture and cook the frittata on both sides, inverting it with the help of a lid or a dish. Serve hot.
