Scallops with lemon

- 1 Jolife lemon
- Cow calf meat 8 slices
- 1 ladle of vegetable stock
- Flour for dusting
- 50 g extra virgin olive oil
- Salt and white pepper to taste
preparation
Gently beat the slices of calf meat and dust them well with flour on both sides. Place the oil in a large pan and, when hot, add the floured slices and allow them to brown on both sides, taking care not to burn the oil. Take the browned slices out of the pan and place them back on a warm plate. In the same pan, add the juice, grated lemon rind and the ladle of vegetable stock, mix it all together and wait for the sauce to thicken. Add salt and pepper and the meat slices and leave to cook for a few minutes. Serve the scallops garnishing the dish, to taste, with some thin slices of lemon and salad leaves.
