Chestnut flour cake

- 400 g chestnut flour *
- 1/4 l milk
- 50 g sugar
- 20 g pine nuts
- 20 g raisins
- Vegetable oil
preparation
Sift the chestnut flour into a bowl and gradually add the milk and two glasses of cold water, beating the mixture with a whisk until smooth and creamy. Add the sugar, a pinch of salt and three tablespoons of oil. Brush with oil a round baking pan large enough to hold the chestnut mixture to a maximum thickness of two centimeters. Sprinkle the pine nuts and raisins over the mixture and drizzle with a little oil. Bake in a preheated oven at 180 °C for forty minutes. Serve the chestnut cake cold or warm.
* To make the chestnut flour, simply dry and finely grind Jolife chestnuts.
