Cherry mousse

- 700 g Jolife cherries
- 25 g gelatin
- 4 egg yolks
- 50 g granulated sugar
- 1 tablespoon vanilla extract
- 3 dl milk
- Juice of 1/2 lemon
- 4.5 dl heavy cream
- 200 g amaretti cookies
preparation
Rinse the cherries thoroughly, pit and chop in a blender in order to obtain a smooth puree. Dissolve the gelatin in a bowl with 6 tablespoons of water over a pan of simmering water. In the meantime, transfer the egg yolks, sugar and vanilla in a pan and beat until smooth. Pour in the milk. Stir over medium heat, until the mixture is thick and smooth, then add the gelatin. Pour the custard into a bowl placed in another bowl filled with ice and chill, stirring continuously. Add the cherries and the lemon juice. Whip the cream until stiff and fold it into the cherry mixture. Create a base of crumbled amaretti cookies on the bottom of small glasses or bowls, press down firmly with a spoon and top with the cherry mousse. Chill in the refrigerator for at least 5 hours. Serve cold.
