Pear preserves

- 1 kg Jolife pears
- 300 g sugar
- 1 lemon
preparation
Rinse the pears thoroughly under running water, peel and cut into wedges. Transfer to a pan and stir in the sugar and lemon juice. Cook over low heat for 50 minutes, stirring often with a wooden spoon. Test the thickness after 30/40 minutes: pour a tablespoon of preserves on a flat dish and let it warm up; the preserves is ready when it does not run when you tilt the dish, otherwise continue cooking. Pour the preserves in sterilized glass jars while still boiling hot, filling the jars up to 1/2-1 inch from the rim. Clean the rim thoroughly and put the lids on, sealing the jars tightly. In order to create a vacuum seal, put the jars upside-down on a warm surface and let aside for 5-10 minutes, then invert and let cool. Serve with a selection of aged cheeses.
