- 2 kg Jolife cherry tomatoes
- Sugar
- Salt
- Olive oil

Rinse the cherry tomatoes and cut in half. Arrange the tomatoes on a baking dish lined with parchment paper and season with a pinch of salt, the sugar and a drizzle of oil. Leave them in the oven (no fan) at 120°C for 8-10 hours. Check the tomatoes once in a while and take out of the oven the ones that dry quicker. When the tomatoes are dry, remove from the oven and set aside to cool. If you like you can keep the tomatoes in oil, layering them in jars with olive oil and pressing down firmly until the jar is full.
