Quinoa with seasoned mackerel

    ingredients

    • 200 g quinoa
    • 125 g mackerel
    • 5 sun-dried tomatoes
    • 2 teaspoons capers
    • 1 tablespoon nuts (blanched almonds and cashew nuts)
    • fresh thyme

    preparation

    Rinse the quinoa for 5 minutes under running water and cook according to the instructions on the package. Break up the mackerel with a fork. Rinse the tomatoes and capers under running lukewarm water, dry thoroughly with paper towels and cut into pieces.  Add to the mackerel together with the nuts coarsely chopped and fresh thyme leaves. Drizzle with extra-virgin olive oil, add the quinoa and toss well. This dish is full of vitamins!
