Frischen melonensalat

- 1 Jolife melon
- 100 g risotto rice
- 4 German sausages
- 10 capers, whole
- Fresh mint leaves
- Salt and pepper
- Extra-virgin olive oil
preparation
Cut the melon in half and scoop out the inside to obtain two empty bowls. Put the flesh aside to use later with the rice. In the meantime, cook the rice in salted boiling water. Once cooked, drain and set aside to cool. Cut the sausages into small cubes. When the rice has cooled season with a drizzle of oil, add the sausage cubes, whole capers, the melon flesh cut into cubes and pepper, mix thoroughly and use the mixture to fill the empty melon halves. Garnish with mint leaves and serve.
