Apricot ice cream

- 300 g Jolife apricots (pitted and weighed)
- 1 lemon, juiced
- 200 ml heavy cream
- 1 package vanillin
- 180 g sugar
preparation
Rinse the Jolife apricots and cut in half, removing the pit. Take a slice of prosciutto and wrap it around the apricot half, securing the top with a small rosemary sprig, which will give flavor and fragrance to the preparation. Repeat with the remaining apricots and slices of prosciutto. Drizzle with oil and pepper to taste and serve as a cold starter.
