- 2 Jolife peaches
- 8 crêpes*
- 1 knob of butter
- 2 tablespoons sugar
- 1/2 glass peach juice
- 2 tablespoons peach preserves
- Confectioners’ sugar
preparation
.Peel the peaches and cut into 8 wedges. Melt the butter in a nonstick frying pan, add the sugar and let it caramelize slightly over very low heat. Add the peach wedges and cook for about 1 minute on each side, then pour the peach juice and continue cooking for 3 more minutes. Spread a thin layer of preserves on each crêpe and fold it to obtain a cone, which you will fill with 4 peach wedges. Dust with the confectioners’ sugar and serve at once.
* How to make the crêpes
Sift 150 g of flour in a bowl, add a pinch of salt and 300 ml of milk and beat vigorously with a whisk to prevent clumps from forming. Add the two beaten eggs, stirring constantly, and let the batter chill in the refrigerator for one hour. Start cooking the crêpes in a small nonstick pan greased with a drop of olive oil.
